Red Wine Burgers with Caramelized Onions and Goat Cheese

These Red Wine Burgers with Caramelized Onions and Goat Cheese are everything you love about a classic burger, but with a major flavor boost.

It’s been one of those “everything falls apart” kind of weeks. It’s the busiest week of the year at my job, and of course, this is the week everything else in the world decides to go crazy. In the past 7 days, the Mr. has gotten stitches and a hacking cough, the back of our house has sprung a leak (and a disturbing patch of mold), I’ve locked my keys in my office, and the flowers have started audibly begging me to water them (at least, I think they have, but that could just be the lack of sleep talking).

Y’all it’s not pretty around here.

When the Sunday Supper theme for this week was posted, I was pumped about it. I mean, who doesn’t love Labor Day, right? Cookouts, a day off from work, soaking up every last inch of summer’s sun. Plus, I knew these Red Wine Burgers with Caramelized Onions and Goat Cheese would be perfect for the occasion.

But that was weeks ago, and the truth is, today I’m exhausted. My brain feels like a mud puddle. I can’t even think of one darn witty thing to say.

I thought maybe I should just cancel this post, cut out for the week, and take a break.

But here’s the great thing about Sunday Supper. Sunday Supper isn’t about being perfect. It’s not about having it all together. It isn’t about having a spotless house, flawless table settings, or a perfect hostess smile. Heck, it’s not even really about the food.

Sunday Supper is all about gathering. It’s about bringing people back to the table to talk, share, and eat together. It’s about connection, relationships, community–setting aside time to care for each other.

At the Sunday Supper table, everyone is welcome. Whether weary or energized, joyful or discouraged. There’s no dress code, no requirements. It’s just an invitation to come, rest, taste, be.

The truth is, I need the table. We all do. We all need a place where we can come just as we are–brain mush and all–and be welcomed and loved.

So today, I’m not only bringing burgers to Sunday Supper, but I’m bringing me–the exhausted, stressed out, ragged, hair back in a pony tail, sweat pant wearing me.

And the burgers?…Well, they’re just an added bonus.

These Red Wine Burgers with Caramelized Onions and Goat Cheese are everything you love about a classic burger, but with a major flavor boost. The red wine makes them taste ultra rich, while the goat cheese and caramelized onions add sweetness, texture, and tang. These burgers are the perfect bridge from summer to fall. They’re all fire charred summer days lingered with cool, dark red wine nights. These are easy to make (if you can stand to spend 30 minutes letting the onions caramelize) and plate really beautifully. Serve em on pretzel buns and the whole party will go crazy. Trust me.

I want to take a minute to thank the other Sunday Supper members for creating this virtual table and for always offering a warm welcome. This is truly a special group, and I’m so thankful I get to be a part of it.

I hope this Labor Day you get a chance to share a supper with the ones you love. Come as you are. Taste. Share. Encourage. Laugh. Because that’s what Sunday Supper is all about.

Red Wine Burgers with Caramelized Onions and Goat Cheese

Yield: 5
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

Ingredients

  • 2 cups red wine
  • 3 Tablespoons sugar
  • 1 Tablespoon olive oil
  • 1 large yellow onion, sliced
  • 1 1/2 lb. ground beef
  • Salt
  • Pepper
  • Crumbled goat cheese, for serving
  • Hamburger Buns-- I recommend pretzel buns! I found mine at Kroger.

Instructions

  • Place wine and sugar in a sauce pan over medium high heat and bring to a gentle boil. Continue to boil (not crazily--turn down the heat if the boil is too wild) until the mixture is reduced to about 1/2 cup. This will take 25-35 minutes. Once reduced, remove from heat and allow to cool.
  • Meanwhile, heat oil in a pan over medium heat and add the onions. Cook, stirring frequently, until onions are a golden caramel color and very sweet. This will take 25-30 minutes. If the onions start to burn you can turn down the heat a little bit and/or add a sprinkling of water to the pan. Once onions are caramelized, remove from heat and set aside.
  • Preheat charcoal or gas grill to medium high heat.
  • Once the wine mixture has cooled enough to touch, crumble the ground beef into a large bowl. Sprinkle evenly with salt and pepper. Stir in 1/4 cup red wine and gently mix with your hand. Gently form the meat into 5-6 patties. Place patties on the grill and grill for 3-4 minutes per side or until cooked to your liking.
  • To serve, place the burgers on split (and grilled, if you can manage it!) buns. Top with caramelized onions, goat cheese, and remaining wine sauce.
