Today I have the privilege of guest posting for the lovely Emily of Jelly Toast. You may remember her from those weekend-worthy Stockyard Pony Cocktails she shared a few weeks back. Emily share a smoothie recipe on her blog every Saturday. At this point, I consider her the smoothie master.ย ย I mean, anyone who can find a way to sneak radishes into a smoothie deserves the title of master, right?

It’s been a pretty sweet week around these parts, what with the cobbler and the birthday celebrations and the 4th of July cookouts. After a few days of indulging, I was ready to fill up on some fruits and veggies. I know smoothies are a great way to do this, but the truth is, theyย aren’t exactly my specialty. I make a pretty tasty green smoothie every now and then, but I’ve never gotten to the place where a smoothie can be a meal replacement. Every time I have a smoothie for breakfast, I feel like something is missing. I find myself staring at the bottom of my empty glass, filled with sorrow that breakfastย is already over.

But, inspired by Emily’s genius, I determined I would make a smoothie worthy of more than just snack time. I wanted it to be satisfying and filling, while still retaining all of its health benefits.

I’m happy to say this Peach Crisp Smoothie totally fits the bill. It’s simple peachy goodness lightly sweetened with maple syrup and topped with a crunchy cinnamon granola you can make in your skillet in under 10 minutes. How’s that for a win?

  2. I got SO excited when I saw this recipe–I’m the exact same way, we need texture here, people! I do love adding oats to my smoothie to add a bit more ‘chunk,’ but I prefer your way ๐Ÿ˜‰ off to read on Jelly Toast, I just found her blog and love it!
