Refreshing and Easy Pineapple and Banana Smoothie

Ohio is giving its best “high school locker room” vibes right now. You know what I’m talking about. The air feels heavy and vaguely wet. It’s the kind of weather that makes you feel like you’re swimming just by stepping outside.

If I’m going to be walking around with a humidity induced fro, rosy cheeks, and sweaty knee pits, I at least need to have an icy cold beverage in my hand.

I have a couple go-to drinks for hot days, including Iced Mint Tea and Iced Coffee with Coconut Milk, but these Pineapple and Banana Smoothies are my current favorite way of coping with the heat.

The combination of pineapple, banana, and fresh mint is just so incredibly refreshing. Creamy, sweet, and just a touch tangy, one sip will instantly transport you to a breezy beach.

Why You’ll Love This Pineapple Mint Smoothie

  • They’re super quick to make– they take less than 10 minutes, and most of that is cutting the pineapple.
  • They’re dairy free– Not only can you make these dairy free. I recommend you do! Coconut milk is my preferred milk for these smoothies. It’s creamy, but still light and refreshing.
  • They’ll cool you right down– The fresh mint is the thing that really sets these smoothies apart–it is so fresh and delicious!

Ingredients Needed

  • Pineapple– I use fresh pineapple for these smoothies. Here’s a great video on how to cut a fresh pineapple.
  • Banana– If I’ve got bananas that are looking over-ripe, I either make a batch of Sour Cream Banana Bread, OR pop them in the freezer. They’re perfect for smoothies!
  • Coconut Milk– I use the coconut milk found in a carton.
  • Fresh spearmint leaves– If you’ve ever grown mint, you know it is quite bountiful. I’m always looking for ways to use fresh mint, and adding them to a smoothie is perfect. If you don’t have fresh mint, you can omit it, but it really adds such a great cooling flavor!
  • Honey– You might find that the smoothies are sweet enough without any extras, but if you want them a bit sweeter, I recommend adding a spoonful of honey.
  • Ice– I like my smoothie SUPER cold, so I always add a little extra ice.

How to Make Pineapple and Banana Smoothies

  1. In a blender, combine all of the ingredients except the honey. Blend on high until smooth.
  2. Taste and sweeten to your liking.

Substitutions and Variations

  • If you don’t have or like coconut milk, you could try almond milk, oatmilk, or cow’s milk.
  • You can use frozen pineapple instead of fresh. If you do this, you’ll need to omit the ice and possibly add a little extra liquid. Pineapple juice, orange juice, or extra coconut milk will all work.

  • Feel free to add more fruits if you like. Frozen mango would be a great addition!

These creamy and super refreshing Pineapple and Banana Smoothies get a burst of cooling flavor from fresh mint.

Ingredients

  • 1 frozen banana
  • 1 cup fresh pineapple
  • 1 cup coconut milk
  • 10 fresh spearmint leaves
  • 1 teaspoon honey
  • 4-6 ice cubes

Instructions

  1. In a blender, combine all the ingredients except the honey and blend on high until smooth.
  2. Sweeten to taste then serve immediately.

Notes

You can use frozen pineapple instead of fresh, but you'll need to omit the ice cubes and possibly add a bit more liquid.

    1. I’m glad you like the photos, because they were a royal pain. I also hate photographing drinks. What with glare and shapeless liquid and lack of color…the whole thing is just a photographic disaster waiting to happen. Oh, and don’t even get me started on the humidity. I was in an outdoor wedding this weekend and I had sweat dripping down the back of my leg just from standing. It was disgusting.

  6. Ugh. I know. THIS HUMIDITY. I’ve just been running the AC for the last week and a half, because I haven’t wanted to deal with it. Seems so strange though, but it’s not in the 90’s or anything like that. Well, when I do get the courage to finally turn the AC off, I’ll keep this recipe in my back pocket. I love how the mint gives a cool, refreshing finish. I’ve never tried mint in a smoothie, but I always seem to buy mint for savory recipes, and then the portion I don’t use always just goes to waste. No more!

    1. Mint has always been a weird one for me too. I used to only use it to make spearmint tea, but I’m trying to branch out and find other uses for it. It lends itself well to sweet and savory recipes. It actually is hitting 90 around here. I was in an outdoor wedding this weekend and was sweating just standing there. Sexy.
