The best of summer is all wrapped up in this Tomato, Corn, and Avocado Chopped Salad.

Guys, I really hope you’re not dreaming of pumpkin and apples right now, because they won’t be appearing here on Neighborfood for a little while yet. I know the kiddos are back in school, football talkย is circling the airwaves, and you just saw Halloween decorations at the grocery store, but IT’S STILL SUMMER.ย Really, we’re just getting started! August is summer’s golden hour.ย Nearly every vegetable and fruit is in season this month, with everything from tomatoes and zucchini to peaches and blackberries looking bodacious and beautiful.

With summer produce looking this good, I had no other choice but to throw together a giant chopped salad. Truthfully, I tire quickly of salads, but chopped salads are a different ball game.ย Each ingredient gets chopped to a similar size so every bite has the perfect balance of flavors. You’re never left with a giant, unruly piece of romaine orย a bite that consists only of a fat slice of watery cucumber.

Sure, the chopped salad might require a little extra prep time, but trust me, it’s well worth the extra work. This saladย is bursting with summer flavor in every bite. The stars of the show are, of course, theย August tomatoes and corn,ย which are almost candy-like in their natural sweetness.

But the wonder of this salad doesn’t stop there. I also added some yellowย bell pepper for extra crunch and color, red onion for sharpness, avocado for creaminess, and a cilantro ranch dressing to tie it all together.

Let’s talk about making your own salad dressings. I used to be so intimidated by it, but I promise it’s way easier than you think. This citrusy lime and cilantro ranch can be whipped up in about five minutes and tastes dreamy. I’m always amazed when I manage to make something from scratch that I’ve previously only bought in a bottle. I was skeptical if it would actually taste like ranch, but sure enough, the Mr. gave it a blind taste test and immediately proclaimed, “That’s some good ranch dressing!’ Score one for the homemade stuff!

All together, this salad is a one-plate summer wonder. It was a big hit with my family, and I found myself craving the stuff even after eating it for lunch several days in a row.ย I served it as a side at a summer BBQ, but you could also add some grilled chicken and make it the main attraction. So grab a knife and get ready to chop, because summer’s not over yet!

Tomato and Corn Chopped Salad with Cilantro Ranch

This bright, beautiful Tomato and Corn Chopped Salad give you the best summer seasonal ingredients drizzled with a stunning homemade Cilantro Ranch Dressing.

Ingredients

  • 2 romaine hearts
  • 2 tomatoes
  • 1/2 red onion
  • 1 orange bell pepper
  • 1 avocado
  • 2 corn cobs

For the dressing:

  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • Juice of 1 lime
  • 2 Tablespoons chopped chives
  • 2 cloves garlic, minced or pressed
  • 1/4 cup milk
  • Salt and pepper

Instructions

  1. Roughly chop the romaine leaves, tomatoes, onion, bell pepper, and avocado and add them to a large bowl. Use a knife to cut the corn kernels from the cob and add them to the bowl.
  2. For the dressing, whisk together the mayo, sour cream, cilantro, lime juice, chives, and garlic. Stir in the milk. Season to taste with salt and pepper.
  3. Drizzle the salad with the cilantro dressing right before serving.

  1. I’m not a huge fan of salad but THIS is calling to me. I can just imagine how fresh and tasty it is, with that lovely satisfying crunch of all the different veggies and this cool, creamy dressing. Throw on some grilled chicken or shrimp and it’s the perfect summer meal. I know you don’t want to hear about the fall, but I’m getting really excited (it’s my favourite season). Plus, it’s the first fall/winter in my new house and I’m already dreaming of how I’m going to decorate for Halloween and Christmas. While I’m still gorging on summer fruit ‘n veggies and ice cream ๐Ÿ˜‰

    1. It’s been friggin hot this week, so I’m “warming up” (har har) to fall now. Up until now we’ve just had such a gorgeous summer I’ve been loathe to let it go. But when it’s 90 and humid, I’m ready.
