Blueberry Mojito Mocktails

When the Mr. and I go out to eat, I don’t usually order a cocktail. It’s partly because I’m cheap and the price of cocktails at fancy restaurants makes me choke, but it’s also partly because I like to save my calories for the main attraction: the food.

If I do order a cocktail, you can bet it’s going to be something fruity or frozen (like these Peach Cherry Wine Slushies). I’m a sucker for a peach bellini, a frosty strawberry daiquiri, or a fuzzy navel, but if there’s any kind of berry mojito on the menu that’s going to be my pick 100% of the time.

With the weather warming up and my food blogging friends posting all sorts of gorgeous boozy berry concoctions, I’ve been feeling more than a little thirsty. Baby R and I might not be able to indulge in the boozy beverages, but that doesn’t mean I have to go without the fresh, fruity,ย citrus flavor of my favorite drink!

These Blueberry Mojito Mocktails took a few tries, but I’m happy to say they’re exactly what I was after. They start with a dreamy blueberry simple syrup, which is what gives this drink it’s gorgeous color.

Simple syrup is great because it mixes well into cold drinks (unlike raw sugar), and you can add it to just about anything (desserts, cocktails, coffee, and even pancake batter…)

Plus, it is easy to add flavor variety into your recipes just by adding one main flavor ingredient to the syrup, like we do with my Vanilla Simple Syrup or Lavender Simple Syrup recipes.

The simple syrup in these blueberry mojito mocktails is muddled with lime and mint and topped off with ice and a bit of sparkling water. This drink is sweet, refreshing, and other than maybe my traditional Orange Julius recipe, I can’t think of another drink that just tastes more like summer. And since it’s alcohol-free, it’s a great drink to bring to a baby shower or family event with the kiddos.

Blueberry Mojito Mocktails

Yield: 1-10
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

For the blueberry simple syrup:

  • 1 cup blueberries
  • 1 cup sugar
  • 1 cup water

For each drink:

  • 3 Tablespoons simple syrup
  • 8-10 mint leaves + sprig for garnish
  • 1/2 lime + slices for garnish
  • 4-6 Tablespoons lemon lime sparking water
  • Ice

Instructions

  1. To make the simple syrup, combine all of the ingredients in a small saucepan. Bring the mixture to a boil, then reduce heat to low and simmer for 15 minutes or until sugar is fully dissolved. Cool completely.
  2. To make the drinks, place 3 Tablespoons of the simple syrup plus the mint leaves in the bottom of a glass. I like to include some of the whole berries in the drink, but feel free to strain them out if you prefer. Using a muddler or the end of a wooden spoon, muddle the mint and blueberries together in the bottom of the glass.
  3. Add the juice of 1/2 a lime, enough ice to fill the glass, plus the club soda to top it off. Garnish each glass with a lime wedge or slice and a sprig of mint. Stir and serve immediately.

  2. Perfect picnic cocktail, fresh and light! When I go out, first it’s cocktails then food…we can complement each other, lol.

  3. I love making cocktails at home, but I am the same way when dining out. I’d rather save my money, and calories on the FOOD! These mock mojitos look so refreshing!
