Add this to the list of reasons I love Pinterest.
Because someone thought to slather guacamole on their grilled cheese. And I probably would have never known about it had it not been for Pinterest. Think of the tragedies this site has already prevented!
So as soon as I found this recipe, I decided it needed to be on our menu, like, NOW. It didn’t take us long to get it on the rotation, and, not surprisingly, this didn’t disappoint. Was there really ever aquestion though?
I mean take the most amazing sandwich creation of all time and then add to it the most amazing dip of all time. Ummm, last I checked Amazing + Amazing = OMG I want to bathe in this stuff.
So needless to say, I was pretty darn happy as we sat at the kitchen island munching on this culinary stroke of genius. I had some tortilla chips on my plate to finish up the extra guac and that’s when the lightbulb went off.
I used to always put chips on my sandwiches growing up. A few Ruffles added just the right amount of crunch and salt to a sandwich.
I just couldn’t believe it had taken me so long to try it with tortilla chips. So there they went. Just a few chips wedged right between the melty cheese and creamy guacamole, then a gentle smush of the top piece of bread to break it up into bite size pieces.
That put this sandwich over the top. It was just what was needed to add some texture and a nice surprise. The little sumpin’ sumpin’ that says, “I’m not just your innocent grilled cheese any longer. I’ve got a wild side.” (Suddenly I’m filled with ideas for movies– Sandwiches Gone Wild anyone?)
Try this sandwich out on a hot summer night. It doesn’t take long to make and is a cool, refreshing take on the classic grilled cheese. And if you want to take a walk on the wild side, add some crunch with a few tortilla chips. You won’t be disappointed.
P.S. You may notice the chips are not in the sandwich in the pictures. That’s because I didn’t figure out how awesome this combo was until AFTER I had already taken pictures. So on this one, you’ll just have to trust me.
Guacamole Crunch Grilled Cheese
Inspired by Two Peas and Their Pod
1/4 cup chopped red onion
1/4 cup coarsely chopped cilantro
1 jalapeno, seeded and diced
Juice of half a lime
1/2 teaspoon coarse salt
4 slices tomato
4 slices cheese (pepper jack, monterey jack, or cheddar are all good choices)
4 slices rye swirl bread (but obviously any crusty bread could work
8 tortilla chips
2 Tablespoons butter
1. In a medium bowl, smash avocado. Add chopped red onion, cilantro, jalapeno, lime juice, and salt and stir together.
2. Heat a flat skillet over medium heat. Butter one side of each of the bread slices. Place 2 bread slices face down in the skillet followed by one slice cheese, tomato slices, guacamole, the second slice of cheese, and then the other piece of bread. Grill until evenly browned then carefully flip and grill for an additional 2-3 minutes or until nice and toasty. Remove from heat.
3. Now, if you’re the daring type (and I know you are), remove the top slice of bread and place 4 tortilla chips on top of the guacamole. Replace bread and smoosh down gently. Enjoy the crunchy creamy melty goodness!
