These Slow Cooker Mediterranean Chicken is drenched in a dreamy white wine lemon sauce and smothered with capers, artichokes, mushrooms, and green beans. It’s a healthy and super flavorful one pot meal!
One of the best things about using the slow cooker is how easy it is. There’s not much more to it than dumping a bunch of ingredients in a bowl and turning a knob. Of course, it’s still possible to mess up a slow cooker recipe. I know, because I’ve done it. Twice.
Luckily, I learned from my mistake and am willing to share this super secret tip to not screwing up a slow cooker recipe. Are you ready? Here it is:
Remember to plug the darn thing in.
That’s right. I forgot to plug my crock pot in not once, but TWICE.
The first time it happened I had a crock pot full of ground turkey for lettuce wraps. I didn’t discover my mistake until I lifted the lid to dish it out. We had pizza that night.
The second time, I had this Mediterranean Chicken and Green Beans in the slow cooker. Luckily, this time I caught my mistake within 30 minutes and was able to save dinner. And thank goodness I did, because this is a dinner worth remembering.
This chicken is loaded with mediterranean flavor, full of bright lemon, salty capers, and sweet sundried tomatoes. Luckily, it’s as healthy as it is delicious. The green beans and mushrooms round out this dish, and provide a base for the tender chicken thighs. Everything is drenched in the lemony tomato and white wine sauce, which is made even better by it’s long bath in the slow cooker.
You can serve this meal all on it’s own, or pair it with pasta or rice to keep it gluten free. A hunk of crusty bread to sop up all the juices is certainly an added bonus, though not required.
