Smoked Swiss and Mushroom Grilled Cheese

ย These days nearly every food imaginable has its own national holiday. I tend to think these celebrations are on the verge of absurd.
After all, do we really need a Lima Bean Respect Day or Turkey Neck Soup Day (yes, those are both real)? Nothing against these humble foods, but I have a hard time breaking out the piรฑatas and confetti for a bean.
However, there are a few national food holidays I feel are worth donning a party hat and popping open a bottle of wine. One of those is National Grilled Cheese Month, celebrated every April by grilled cheese enthusiasts everywhere.
If ever there was a food deserving of such a holiday, it is this one. Grilled cheese is an American classic, beloved by adults and children alike. It has brought comfort to many a dreary weeknight, provided faithful companionship to tomato soup for decades, and even inspired entire restaurants to form in its honor.
Caramelized Onion and Mushroom Grilled Cheese
Grilled cheese has always been a favorite of both the Mr. and I, but it’s become an even bigger staple in my diet since my Dr. recommended increasing the protein in my diet to help curb the hangries during pregnancy.ย Cheese is a great source of protein and calcium, which has made grilled cheese sandwiches my new best friend.
We’ve been experimenting with all sorts of new combos, but today I’m sharing one of my absolute favorites. Behold, the Garlic Mushroom Grilled Cheese: a gooey pile of rich, caramelized onions and mushrooms smothered in a blanket of savory smoked Swiss cheese.
I discovered Smoked Swiss last year when I traveled to Amish Country with the American Dairy Association Mideast. We visited a local cheese shop called Pearl Valley Cheese known for its Swiss cheese.
Prior to this trip, I had no idea Ohio was the number 1 Swiss Cheese producing state in the country. After tasting Pearl Valley’s Swiss straight from the aging barrel, it’s easy to see why. If you thought you were a Swiss cheese hater, Pearl Valley could easily convince you otherwise.
This Mushroom Grilled Cheese is an explosion of smoky, melty, umami goodness. The Mr. and I were both completely smitten with it, and it appears baby R was too, because it banished the hangries on the spot!
Mushroom Grilled Cheese
Piled high with Swiss cheese, mushrooms, and caramelized onions, this Buttery Mushroom Grilled Cheese is a decadent meal you can make in less than 30 minutes.
Ingredients
For the mushrooms:
- 2 tablespoons butter
- 1 tablespoon olive oil
- 8 ounces mushrooms, sliced
- 1/2 cup thinly sliced onions
- 1 teaspoon minced garlic
- 1 tablespoon dry white wine
- Pinch thyme
- Salt and pepper
For the sandwiches:
- 2 tablespoons butter
- 4 slices sturdy bread (such as sourdough)
- 4 slices smoked Swiss cheese
Instructions
For the mushrooms:
- Heat the oil and butter in a large sauté pan over medium heat. Once the butter is starting to sizzle, add the mushrooms in a single layer. Let them cook for a few minutes undisturbed. Check the bottom of the mushrooms, and, when they're golden brown and caramelized on the edges, flip. Continue to cook until the other side is caramelized, as well. Add the onions and sauté until softened, about 2 minutes. Stir in the garlic.
- Deglaze the pan with the wine and allow the liquid to cook off for another minute. Season with thyme, salt, and pepper to taste. Remove from heat.
For the sandwiches:
- Butter one side of each of the four slices of bread. Assemble the sandwiches with one piece of bread (buttered side out) followed by a slice of cheese, half the mushrooms, another slice of cheese, then a second slice of bread, buttered side out.
- Heat a grill pan over medium heat. Add the sandwiches and grill for 3-5 minutes or until golden and crisp on one side. Carefully flip the sandwiches, cover the pan with a lid or cookie sheet, and cook an additional 2-3 minutes or until the opposite side is golden and cheese is extra melty. Serve immediately.
