Frankenstein Rice Krispie Treats

Frankenstein Rice Krispies are an easy Halloween treat the kids will love! We start with the gooiest rice krispie treats, then dip them in chocolate and add googly eyes for an adorably delicious dessert.

Iโ€™ve said before that Iโ€™m not really a โ€œcute foodโ€ kind of girl. I worked in a bakery for a while where I learned some decorating techniques, but after trying my hand at a few wedding cakes, I decided it was way too tedious for me. I donโ€™t really like fussing over my food. Iโ€™d rather just eat it.

There are two exceptions to my anti-decorating, anti-cute food stance. One is holiday cut out cookies, because OBVIOUSLY Christmas isnโ€™t complete without some pie crust star cookies, flower canestrelli, and snow men covered in colored frosting.

The second exception is Halloween food. I donโ€™t know why, but I canโ€™t resist the Halloween bark, dirt pudding graveyards, and Halloween mashed potatoes. Itโ€™s way too fun not to join in.

These Frankenstein Rice Krispie Treats feed my need for cute food without being overly time consuming or fussy. Theyโ€™re based on my absolute favorite ooey gooey Chocolate Covered Rice Krispie Treats, and can be made in about 30 minutes.

I couldnโ€™t stop smiling when I was editing these photos. I mean, theyโ€™re so lovably ridiculous and silly, right? Kids and adults alike will get a kick out of these adorable Frankenstein treats!

Ingredients:

Weโ€™ll start with the basic ingredients for rice krispie treats: butter, sweetened condensed milk (the secret to soft and gooey treats!), marshmallows, rice krispies cereal, vanilla, and sea salt.

Youโ€™ll also need green food coloring to turn your treats a characteristically Frankenstein hue.

We use semi-sweet chocolate (either chips or bars) and just a teaspoon of coconut oil for the Frankenstein hair, eyebrows, and mouth.

Finally, I like to use edible googly eyes for the eyes (find some here!), but you can also cut mini marshmallows into thin circles and dot them with chocolate to make the eyes.

How to Make Frankenstein Rice Krispie Treats

  1. First, make the rice krispies. Melt the butter in a large pot over medium heat. Add sweetened condensed milk and stir until bubbly, about 30 seconds. Stir in a splash of vanilla and pinch of sea salt.
  2. Reduce heat to medium low and stir in the marshmallows. Continue to stir until marshmallows are completely melted. Add a few drops of green food coloring and stir to combine.
  3. Add rice krispie treats and the last cup of marshmallows (if using), stirring to combine.
  4. Transfer the treats to a greased 9 x 13 inch pan and gently spread out.
  5. While the treats set up, melt the chocolate and coconut oil in the microwave or a double boiler into smooth. Place a ยผ cup of the chocolate mixture in a plastic bag. Put the remainder in a glass measuring cup.
  6. Slice the treats into 16 slices. I do them tall and skinny, so four cuts on both the long and short ends.
  7. Dip the treats into the chocolate, covering about ยผ of the top. Scrape off any excess chocolate, and lay on waxed or parchment paper.
  8. Decorate the faces. This is the really fun part! Cut a tiny snip out of the corner of the bag of chocolate so you have a make-shift piping bag. Place two dots of chocolate on each treat for the eyes. While the chocolate is still wet, place the googly eye on top so it sticks. Pipe some stitches for a mouth, and give your Frankenstein some eyebrows.
  9. Allow the treats to dry before eating. Or donโ€™t. Itโ€™s your life. You can eat melty Frankenstein rice krispies if you want to.

Tips for Fun and Fuss Free Frankenstein Rice Krispies

  • Gently press the rice krispie treats into the pan. Packing them down makes for hard, dense krispies and no one wants that.
  • Grease your hands with cooking spray or butter to keep the mixture from sticking to you.
  • Decorate the flat side (the side that was pressed down in the pan) of the rice krispies treats. The eyes stick better on a flatter surface, and itโ€™s easier to pipe your decorations too.
  • Give your Frankensteins some personality with different expressions. Try a unibrow, angry downward slanted eyebrows, raised surprised eyebrows, and googly eyes that are pointed in opposite directions.

Storage and Make Ahead Instructions

Because of the sweetened condensed milk, these treats stay soft for several days.

Be sure the treats are completely dry, then store in an airtight container at room temperature for up to 4 days. If youโ€™re stacking them, put a piece of parchment paper down between the layers.

  • ยผ cup sweetened condensed milk
  • Splash vanilla extract
  • Pinch sea salt
  • 10 oz. marshmallows (regular or mini)
  • A few drops green food coloring
  • 6 cups rice krispies cereal
  • 1 cup mini marshmallows, optional
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil
  • Edible googly eyes

Instructions

Make the Rice Krispie Treats

  1. Melt the butter in a large pot over medium heat. Add sweetened condensed milk and stir until bubbly, about 30 seconds. Stir in a splash of vanilla and pinch of sea salt.

  3. Dip the treats into the chocolate, covering about ¼ of the top. Scrape off any excess chocolate, and lay on waxed or parchment paper, with the flatter side facing up.
