Air Fryer Breakfast Burritos: The Perfect Make Ahead Breakfast

Our love for the air fryer has been well documented (see these Air Fryer Chicken Thighs and Air Fryer Hot Dogs), but I’m super excited to bring my love for this appliance to the breakfast arena.

Breakfast burritos are the perfect candidate for the air fryer, whose circulating heat renders crisp, browned burritos in just minutes.

These burritos are super easy to prepare in advance and a great way to start the day. Protein packed eggs contain 8 essential nutrients, including choline, which helps with cognition and memory. New Dietary Guidelines recommend them as a first food for babies and toddlers AND an important food for pregnant moms!

Breakfast Burritos with Bacon and Eggs

A breakfast burrito is an ideal vessel for any bits and bobs you happen to have in the fridge, but you can never go wrong with a classic combo of bacon, eggs, and cheese.

From there, you can add whatever your heart desires! In this version, I add sauteed onions (a must if you ask me!), avocado, and tomatoes. Other great burrito fillings include:

  • Sauteed mushrooms
  • Cooked spinach
  • Sauteed bell peppers
  • Beans
  • Fried potatoes or hashbrowns

How to Make Air Fryer Burritos

1. Fry the Bacon and Sautรฉ the Onions

These burritos can be made with turkey bacon or regular bacon, but either way, you’ll want to fry it in a skillet. Normally, I prefer making bacon in the oven, but for this recipe, I use the skillet for one reason: BACON GREASE.

Skillet frying bacon leaves you with a hot skillet and a glorious sheen of bacon grease. It’s a situation that’s begging for a pile of chopped onions.

If you’ve never sautรฉed onions in bacon grease, prepare to discover a new favorite hobby. It leaves them silky soft, smoky, and sweet, and makes these burritos so much more than just a Bacon and Egg Burrito.

2. Make Perfect, Creamy Scrambled Eggs

Once the bacon and onions are made (or while they’re frying if you’re good at multitasking), you can whip up some scrambled eggs. Whisk together eggs and a splash of whole milk, then pour them in a skillet with a few pats of melted butter.

Keep the heat on medium low and keep the eggs moving. At first, it won’t look like much is happening, but continue to drag your spatula through the mixture, and the eggs will begin to form ribbons of fluffy curds.

Take them off heat as soon as they’re soft set and still a bit shiny.

3. Assemble Your Burrito Ingredients

Gather all your burrito ingredients together, including:

  • Large flour burritos (Mine were 10 inch. If you go smaller, you’ll be able to make a few more.)
  • Cheese- Mexican blend, cheddar, Monterey jack, and pepper jack are all great choices!
  • Scrambled eggs
  • Cooked bacon (I used turkey bacon.)
  • Sauteed onions
  • Diced avocado
  • Diced tomato

How to Fold a Breakfast Burrito

I am a chronic over-filler of burritos, which inevitably leads to a burrito quite literally bursting at the seams. Err on the side of less fillings to ensure everything can be tucked in nice and snug.

Layer the burrito fillings down the center left of the burrito, leaving at least 1.5 inches of space on the top and bottom.

Fold in the top and bottom of the burrito then fold the burrito from left to right over the fillings. Lay the burrito seam side down until ready to bake. Check out the recipe video if you need a visual!

How to Air Fry Burritos

To air fry, place the burritos seam side down in the air fryer. You can spray them with olive oil spray, but they actually crisp fine without it.

Depending on your air fryer, you should be able to fit 2-3 at a time. We use (and love) the Ninja Air Fryer. Fry for 5 minutes at 390 degrees, flip, and fry an additional 3-4 minutes.

Air fryers work by blowing heat evenly around food, which can sometimes lead to things flying about. In all our testing, we only had an issue with one burrito flying open. That said, it doesn’t hurt to secure the burrito with a toothpick through the center.

I usually don’t preheat my air fryer. However, if you’re making several batches of burritos, the final few will cook a minute or two faster than the first batch.

How to Freeze Burritos

Wrap the uncooked burritos in saran wrap and then store in a zip top bag in the fridge or freezer until you’re ready to eat. They do not need to be thawed overnight.

Note: If freezing burritos, omit the tomato and avocado. Instead, serve them as a topping after they’re cooked!

How to Air Fry Frozen Burritos

No soggy burritos here! Air frying frozen burritos makes them perfectly crisp!

  1. Remove the plastic wrap from the frozen burrito and wrap it in foil.
  2. Air fry at 390 degrees for 10 minutes.
  3. Remove the foil and air fry an additional 5-7 minutes or until burrito is crispy and fillings are cooked through.

Want to speed things up? Reheat your burrito in the microwave, wrapped in a damp paper towel, for 3 minutes (flipping once). Then place the burrito in the air fryer and fry 5-7 minutes or until crispy.

Dipping Sauce for Air Fryer Breakfast Burritos:

While not entirely necessary, a great dipping sauce can take a breakfast burrito from good to FAN-tastic.

Sour cream, salsa, and hot sauce are all perfectly fine toppings. The Mr. likes his with ketchup, and while I wouldn’t call that “perfectly fine,” it’s your burrito so you can dip it in whatever you want!

I was craving something cool, creamy, and summery, so I whipped up a hybrid aioli of sour cream, mayonnaise, lemon juice, and basil. The bright, fresh flavors are a lively contrast to the salty, hearty fillings, and make these Air Fryer Breakfast Burritos taste like something you’d order at a restaurant!

Air Fryer Breakfast Burritos

Yield: 6 10 inch burritos
Prep Time: 25 minutes
Cook Time: 10 minutes
Total Time: 35 minutes

Bacon and Egg Breakfast Burritos are cooked in the air fryer until golden and perfectly crisp!

Ingredients

For the burritos:

  • 12 strips turkey bacon
  • 1 medium yellow onion, chopped
  • 12 eggs
  • 1/3 cup milk
  • ยฝ teaspoon salt
  • 1/4 teaspoon smoked paprika (optional)
  • 2 Tablespoons butter
  • 2 avocados, chopped
  • 2 tomatoes, topped
  • 1 ยฝ cups Mexican blend cheese
  • 6 10 inch burrito style tortillas

For the dipping sauce:

  • ยผ cup sour cream
  • ยผ cup mayo
  • Juice of 1 lemon
  • 2 Tablespoons basil
  • Salt

Instructions

  1. In a large skillet, fry the bacon over medium heat until crispy. Remove the bacon to a paper towel lined plate. Once cool, chop the bacon.
  2. Remove all but 1 Tablespoon of the bacon grease then add the chopped onion. Saute until onions are soft and translucent, 5-7 minutes.
  3. Meanwhile, whisk together the eggs, milk, salt, and paprika. Melt the butter in a skillet set over medium low heat. Add the eggs and continue to cook, stirring constantly, until the eggs are soft set and still a bit shiny. Remove to a plate.
  4. To assemble the burritos, divide the fillings (bacon, onion, eggs, cheese, tomato, and avocado*) evenly over the 8 burrito shells, leaving 1.5 inches on the top and bottom free.
  5. Fold the bottom and top in, then roll the burrito over the filling. Lay it seam side down. Repeat with remaining burritos.
  6. Place 2-4 burritos seam side down in your air fryer, and fry at 390 degrees for 5 minutes. Flip and cook another 3-5 minutes or until golden and crispy.
  7. For the sauce, whisk together all ingredients and refrigerate until ready to serve.

Notes

  • If you're planning to freeze the burritos, omit tomato and avocado and serve on the side instead.
  • To freeze or refrigerate, wrap unfried burritos in saran wrap and an airtight container or baggie. Freeze for up to 3 months. See post above for cooking instructions.
