Roasted Tomatoes and Burrata with Meatballs

Roasted Tomatoes with Burrata and Meatballs is a gorgeous late-summer meal or appetizer made in under 30 minutes.

Sweet and juicy roasted tomatoes are the perfect compliment to hearty meatballs and burrata.  Pair it with crostini for a satisfying 30 minute meal.

INGREDIENTS

Cherry tomatoes

Olive oil

Kosher salt and pepper

Sugar

Loaf Italian or French bread

Butter

              INSTRUCTIONS Preheat the oven to 425 degrees.  Line two baking sheets with foil.

STEP 1

Toss the tomatoes with the olive, salt, pepper, and sugar.  Spread on one of the baking sheets.

Stir together the melted butter and olive oil. Brush on both sides of the bread, then spread the bread slices in a single layer on the second sheet pan.
