Poached eggs have long been one of my cooking nemeses. I’ve tried all the hacks- swirling water, adding vinegar, adding salt, using a shallow pot, even straining the eggs through a fine mesh sieve!

It took us a bit to overcome the intimidation factor of sous vide cooking, but we were surprised to learn it’s far easier than we expected.
