Smoked Swiss cheese and sauteed garlic mushrooms make a decadent grilled cheese you can make in less than 20 minutes!
These days nearly every food imaginable has its own national holiday. I tend to think these celebrations are on the verge of absurd. After all, do we really need a Lima Bean Respect Day or Turkey Neck Soup Day (yes, those are both real)? Nothing against these humble foods, but I have a hard time breaking out the piñatas and confetti for a bean.
However, there are a few of these national food holidays I feel are worth donning a party hat and popping open a bottle of wine. One of those is National Grilled Cheese Month, celebrated every April by grilled cheese enthusiasts everywhere.
If ever there was a food deserving of such a holiday, it is this one. Grilled cheese is an American classic, beloved by adults and children alike. It has brought comfort to many a dreary weeknight, provided faithful companionship to tomato soup for decades, and even inspired entire restaurants to form in its honor.
Grilled cheese has always been a favorite of both the Mr. and I, but it’s become an even bigger staple in my diet since my Dr. recommended increasing the protein in my diet to help curb the hangries during pregnancy. Cheese is a great source of protein and calcium, which has made grilled cheese sandwiches my new best friend.
We’ve been experimenting with all sorts of new combos, but today I’m sharing one of my absolute favorites. Behold, the Sauteed Mushroom and Smoked Swiss Grilled Cheese, a gooey pile of rich, caramelized mushrooms smothered in a blanket of savory smoked Swiss cheese.
I discovered Smoked Swiss last year when I traveled to Amish Country with the American Dairy Association Mideast. We visited a local cheese shop called Pearl Valley Cheese known for its Swiss cheese. Prior to this trip, I had no idea Ohio was the number 1 Swiss Cheese producing state in the country. After tasting Pearl Valley’s Swiss straight from the aging barrel, it’s easy to see why. If you thought you were a Swiss cheese hater, Pearl Valley could easily convince you otherwise.
