Extra virgin olive oil

Chopped rosemary

STEP 1

INSTRUCTIONS

Prep.  Preheat the oven to 400 degrees.

STEP 2

Season the veggies Place the carrots and parsnips on a half sheet pan. Drizzle with the olive oil, and sprinkle with rosemary, thyme, salt, and pepper. Toss well, so everything is fully coated.

STEP 3

Roast.  Place the carrots and parsnips in the oven and roast for 20 minutes, stirring halfway through.
