Berry Avocado Popsicles

These Berry Avocado Popsicles are super refreshing with pockets of creamy avocado throughout.

Ingredients
 

  • 2 cups fresh berries (I used a mix or raspberries and strawberries)
  • 1/2 cup apple juice
  • 1/2 large ripe banana
  • Juice of 1/2 a lime
  • 1 avocado (roughly chopped)

Instructions

  • In a blender, combine the berries, apple juice, banana, and lime juice. Puree until well combined.
  • Scoop the avocado into the blender and pulse on the "stir" or lowest setting until the avocado is in small chunks throughout the mixture. Divide evenly among six popsicles in a mold, add the sticks, and then freeze at least 24 hours.

Notes

  • The size of your mold will determine how many popsicles this makes.
