Brie Burgers

These Brie Burgers feature melty brie cheese, apricot jam, and crispy prosciutto for a sweet and savory burger that's easy to make but tastes gourmet!

Ingredients
 

  • 1 ½ lbs. 80/20 lean ground beef
  • About 1 teaspoon Kosher salt
  • Fresh cracked pepper
  • 4 brioche buns
  • 4 Tablespoons salted butter
  • 7 ounces brie cheese (sliced)
  • 3 ounces sliced prosciutto
  • ½ cup apricot jam
  • Mixed greens

Instructions

  • Preheat the grill to medium high heat, about 450 degrees.
  • Gently break the beef into smaller chunks, then shape into 4 round balls. Use the palm of your hand to flatten into patties slightly larger than the size of your bun. Smooth the edges. Use your thumb to push an indent into the center of each patty. Season both sides generously with salt and pepper.
  • Place the burgers on the grill, and grill for about 4 minutes, then flip. Do not press the patties down! Grill an additional 2-3 minutes, adding the cheese for the final minute. Burgers can be removed from the grill when they measure 155 degrees. Tent with foil and let sit for 10 minutes.
  • While the grill is still hot, spread the butter on the brioche buns and place them, butter side down, on the grill. Grill until the bottom side has nice grill marks and buns are warm. Remove.
  • Meanwhile, make the crispy prosciutto. Heat a large skillet over medium high heat. Add the prosciutto pieces, spreading them out over the pan. Cook until browned on one side, then flip. Cook an additional few minutes, until prosciutto is crispy. Remove to a plate.
  • To assemble the burgers, place the mixed greens on the bottom of each bun. Top with the burgers, then a generous scoop of jam. Add the crispy prosciutto and sandwich with the top bun. Enjoy!

Notes

Leftover burgers can be stored in the fridge for about 4 days. Reheat in the microwave.
