These Cucumber Sandwiches with cream cheese and dill are a creamy and crisp sandwich that's perfect for afternoon tea or a quick vegetarian lunch.

Ingredients
 

  • 4 ounces cream cheese (at room temperature)
  • 4 Tablespoons mayo
  • 1 1/2 teaspoons dill (dried or fresh)
  • 3 teaspoons lemon juice (about the juice of one lemon)
  • 10 slices good quality white bread (or bread of your choice)
  • 3 mini seedless cucumbers (sliced)
  • Salt and pepper
  • Fresh chives (for serving)

Instructions

  • In a small bowl, stir together the cream cheese, mayo, dill and lemon juice.
  • Cut the crusts off the bread then slather both sides with cream cheese mixture. Spread the cucumbers in a single layer on one side of bread. Sprinkle with salt, pepper, and chives then top with the second slice of bread.

Notes

  • Feel free to substitute different breads if you prefer.
