Ingredients

  • 1 lb fresh green beans (trimmed)
  • 1 red bell pepper (sliced)
  • 2 Tablespoons butter
  • 1/4 cup water
  • 1/4 - 1/2 cup walnuts (chopped)
  • 3 Tablespoons honey
  • Salt and pepper to taste

Instructions

  • In a large skillet, bring the water along with 1 Tablespoon of the butter to a boil. Add the green beans and bell pepper and return the mixture to a boil. Reduce heat slightly but continue to boil uncovered for 5 minutes. Cover, then boil 5-8 minutes longer, or until beans and peppers are tender, but still a bit crisp.
  • Meanwhile, toast the nuts in a dry skillet over medium heat until golden and fragrant. Set aside.
  • When the beans are tender, add the walnuts to the pan and toss everything with honey and the remaining butter. Season to taste with salt and pepper and serve.

  • This is the perfect holiday side dish!
