Ingredients

  • 4 cups baby spinach
  • 4 sprigs mint (leaves removed and torn)
  • 1 avocado (sliced)
  • 8 strawberries (sliced)
  • 4 ounces goat cheese (crumbled)
  • 1/3 cup halved pecans

For the dressing:

  • 1/4 cup olive oil
  • Juice and zest of 1 lime
  • 1 Tablespoon honey
  • Salt and pepper (to taste)

Instructions

  • In a bowl, toss together all of the salad ingredients. In a small jelly jar with a tight fitting lid, shake the dressing ingredients until well combined.
  • Pour over the salad right before serving. Sprinkle with salt and pepper to taste and enjoy!

Notes

  • This is a great way to learn to love mint! It's rare to see the leaf being used as a whole, but it adds so much flavor here.
