Strawberry Chocolate Chip Cobbler

Ingredients
 

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/3 cups sugar
  • 2 Tablespoons butter (softened)
  • 1 Tablespoons milk
  • 1 teaspoon vanilla
  • 1/2 cup red Moscato (or sub other Moscatos)
  • 4 cups hulled strawberries
  • 1/2 cup chocolate chips
  • Whipped cream or ice cream for serving

Instructions

  • Preheat the oven to 375 degrees. Grease a 9 x 9 inch square pan.
  • In a small bowl, mix together the flour, baking powder, and salt. In another bowl, beat together the eggs and 1 cup of the sugar. Add the butter, milk, and vanilla, stirring to combine. Add the flour mixture and stir until just combined. Pour the batter into the prepared pan. Sprinkle with chocolate chips.
  • Meanwhile, in a medium sized saucepan stir together the remaining 1/3 cup sugar and the moscato. Bring to a simmer and simmer for 3-4 minutes. Add the strawberries and stir to coat. Pour the fruit and all of the syrup over the batter. The mixture will appear soupy.
  • Bake for 30 minutes or until golden and set. Serve warm with ice cream or whipped cream.

Notes

  • Don't forget the whipped cream or ice cream for the top!
