Turkey Avocado Sandwich with Chipotle Mayo

This Turkey Avocado Sandwich gets its smoky heat from an easy homemade chipotle mayo. It's the perfect way to upgrade your deli meat sandwich!

Ingredients
 

For the chipotle mayo:

  • 1/2 cup mayonnaise
  • 1 chipotle pepper in adobo sauce + 1 Tablespoon adobo sauce (diced)
  • Pinch salt
  • Squeeze of lime juice (optional)

For the sandwiches:

  • 4 slices sharp cheddar cheese
  • 3/4 lb. deli turkey (or about 8 slices)
  • 1 tomato (sliced)
  • 2 avocados (pitted and thinly sliced)
  • 1/2 cup sprouts
  • 8 slices sourdough or Italian bread
  • Kosher salt and black pepper (to taste)

Instructions

  • In a small bowl, whisk together mayonnaise and chipotle pepper with adobo sauce. Taste and season with salt, pepper, and a squeeze of lime juice.
  • Spread the chipotle mayonnaise on one side of each of the eight slices of bread. Top with the cheese, deli turkey, tomato, and avocado slices. Sprinkle the tomato and avocado with salt and pepper, then finish with the sprouts and the second slice of bread. Enjoy!

Notes

  • Adjust the heat of the chipotle mayo by adding more sauce or a second pepper.
  • This is also great with Gouda, Meunster, or provolone cheese.
