Watermelon Lime Mint Popsicles

Don’t let your leftover watermelon go to waste! Pop it in your blender, freeze it, and you’ll be well on your way to enjoying these Watermelon Lime Mint Popsicles.

Ingredients
 

  • 1/2 a small seedless watermelon (about 4 cups)
  • Juice of 1/2 a lime
  • 2 teaspoons honey
  • 6 - 12 mint leaves

Instructions

  • Scoop the flesh of the watermelon out of the rind and place it in a blender. Add lime juice and honey. Puree mixture until smooth.
  • Pour puree into popsicle molds (this makes 6 with just a tad leftover). Push the mint leaves down into the puree. If you want it to show through when they're frozen, make sure they're placed on the outside of the popsicle.
  • Freeze for 4 hours or overnight.
  • When ready to eat, dunk the mold in hot water for about 15 seconds, then remove and eat. Mint leaves can be eaten or discarded as you lick. :)

Notes

  • Make sure and freeze these long enough before trying to unmold as you don't want a mess on your hands!
