Souper Bowl Week continues with this hearty Slow Cooker Meatball Minestrone. It’s a satisfying one pot meal that only takes 15 minutes to prep!

Ingredients
 

  • 1 sweet onion (chopped)
  • 4 carrots (peeled and chopped)
  • 2 stalks celery (chopped)
  • 3 cloves garlic (minced)
  • 2 cups chopped kale
  • 1 yellow potato (peeled and chopped)
  • 14 oz diced tomatoes with juice
  • 15 oz cannellini beans, drained and rinsed
  • 4 cups low sodium beef broth
  • 18 fully cooked frozen meatballs (mine were gluten-free)
  • 1 teaspoon Kosher salt
  • Additional salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions

  • Combine all of the ingredients in a large crock pot. Cook on high for 4 hours or low for 8 hours.
  • Season with additional salt and pepper, if needed.

Notes

  • Serve hot with grated Parmesan cheese and crusty bread for sopping up the broth!
