You’ll love waking up to this quick and easy Cinnamon Apple Breakfast Banana Split!
When I wake up in the morning, the first thought on my mind is breakfast. I know some people can’t think of eating first thing in the morning. My husband can grab a cup of coffee and fly out the door without a bite. I am not one of those people. I wake up hungry, which means I very rarely want to spend much time preparing breakfast. If it takes longer than 20 minutes, I’m going to have the hangries, and no one likes a hangry Courtney.
But after awhile cereal and milk gets a little boring. It does the job, but it’s not exactly gourmet, and it’s definitely not winning awards in the beauty department either. So what do I do when I need to break out of the routine, but still get food in my belly in a hurry? I make a Breakfast Banana Split.
At the risk of being too obvious, let’s start with the basics here. The perfect Breakfast Banana Split has to begin with a nice, ripe banana split in half and put on your prettiest plate or bowl. Next, a big scoop of yogurt. My new yogurt obsession is Noosa. It’s an Aussie style yogurt that tastes like a cross between Greek and regular yogurt. It’s thick, creamy, and has a hint of tang, but isn’t quite as intense as Greek yogurt. I discovered the stuff while I was pregnant, and I L-O-V-E love it! They have all kinds of wonderful flavors (hel-LO, Strawberry Rhubarb!!), but this time of year, I prefer the cranberry apple or honey.
After you’ve got your yogurt game on, I like to add a little crunch in the form of granola or cereal. My two favorites right now are Simple Truth’s Pumpkin Granola and Kashi’s Go Lean Cinnamon Crumble. Since I’m feeling all the fall vibes right now, I like to add a little chopped up apple to the mix and an extra sprinkling of warm, spicy cinnamon. The finishing touch is a drizzle of honey and a big spoon, because you’ll want to gobble this up!
This is one of my favorite morning breakfasts, because it’s fast, delicious, and fun! I mean, who doesn’t want to eat a banana split for breakfast? Plus, it’s easy to customize it for whatever season or mood I’m feeling for the day. Try berries and strawberry rhubarb yogurt (dreaaaamy) in the summer, or tart cherry yogurt and dark chocolate chips for a bittersweet treat.
- 1 banana
- 1 (8 ounce) container Noosa honey or cranberry apple yogurt
- ¼ cup granola of your choice (I used Simple Truth Pumpkin Spice Pecan Granola)
- ½ a small apple, chopped
- 1 Tablespoon honey
- Sprinkling of cinnamon
- Split the banana in half and place it on the plate. Top it with the yogurt, granola, and diced apple. Drizzle with honey and sprinkle with cinnamon before serving. Enjoy your breakfast banana split!5
