Berry Avocado Popsicles

It’s been a little wild around here the past few weeks. We discovered a fairly major foundation issue which required a complete demo and renovation of our mud room. Because of the reno, we had to move our deep freezer, all of my blog props, and the random cleaning supplies/dog brushes/junk I’d stashed away from the mud room into our dining room. I’m sure you can imagine how charming it is to eat dinner next to my broom collection, with the hum of the deep freeze as background music.

Add to that a daily blanket of construction dust, the steady clang of hammers and drills, a wave of humidity, and a teething baby, and things were…well, rather tense for a few days. When days are long, patience is short, and my hair is as big as Monica Gellar’s in Barbados, there’s only one option: Make popsicles. Make lots and lots of popsicles.

Once the heat of summer hits, I have a standing order for a fresh batch of popsicles each week, and these Berry Avocado Popsicles happen to be one of our favorites. I never would’ve though to add avocado to a popsicle until I tried it at a fun little place in Sarasota called Pop Craft. They make the best popsicles, studded with all kinds of interesting herbs, chocolate, fruits, and nuts. I was shocked at how much I loved the bits of avocado in the pop I tried. The flavor wasn’t overwhelming, but it added a great creamy, almost buttery texture that usually can’t be had without a hefty dose of dairy.

I decided to make my own avocado popsicles at home, and so these pops were born! These are so easy to make and customize to your liking. The berry flavor is prominent here, so choose your favorites. I used a blend of raspberry and strawberry, but I think blackberries and blueberries could also play nicely here. They get blended up with a ripe banana to add natural sweetness, a little apple juice, and a squeeze of lime. Then I quickly pulse in the avocado, so tiny chunks remain throughout the pops.

These popsicles are so refreshing on a hot summer day, and perfect for adults and kids. My little guy loves them, and they work wonders on his poor teeth. Because I share these with my baby, I haven’t made them overly sweet, but feel free to add honey or sugar if you like them a bit sweeter. I hope you and yours enjoy them as much as we do!

Berry Avocado Lime Pops
 
Ingredients
  • 2 cups fresh berries (I used a mix or raspberries and strawberries)
  • ½ cup apple juice
  • ½ a large ripe banana
  • Juice of ½ a lime
  • 1 avocado, roughly chopped
Instructions
  1. In a blender, combine the berries, apple juice, banana, and lime juice. Puree until well combined. Scoop the avocado into the blender and pulse on the "stir" or lowest setting until the avocado is in small chunks throughout the mixture. Divide evenly among six popsicles in a mold, add the sticks, and then freeze at least 24 hours.

    Excellent photo!!! I’m sold!!! Might have to hide the avocado from my 8yr old, picky eater by blending in a bit more, at least until he discovers how delicious it is!

    tried and loved, but my boyfriend wanted a little more sweetness in them, would you recommend sugar or honey? and how much? Please let me know! Thanks!!

      Hi Ashlie! Glad you enjoyed these! You could use either honey or sugar and the amount really depends on your taste. Honey will pack a bigger punch sweetness wise, so maybe just try a Tablespoon to start. For sugar, you’ll likely want 2 Tablespoons to 1/4 cup depending on how sweet you like it. For either, taste before you freeze them and add more to your taste! I’ve found these taste a little sweeter pre-frozen so if you taste them before freezing them and they seem just right, maybe add a smidge more.
