Friends, THANK YOU so much for all your support and kind comments on Facebook and Twitter over the past week. Between the stomach flu plague, the ER visit, and the blog being down, we’ve had a rough go of things. It’s beginning to feel like the Mr. and I are competing in a wild race to see who can reach their individual insurance deductible first. Obviously, he won months ago (see: broken ankle), but I think just to rub it in my face he had to squeeze in one last ER trip before the end of the year. He is such an overachiever. (I’m kidding, of course…buuuuut really. The past two months have been madness.)

I’m so sorry to all of you who were unable to find recipes during the blog outage. The blog is finally back from the dead and not a moment too soon because I have some fab recipes I’ve been dying to share with you. Also, I missed you guys…for reals.

This post was supposed to go up Sunday for #SundaySupper, but obviously didn’t make it. However, I’m still sharing it today because 1) These Spicy Raspberry Brie Bites are puuuuurfect for your holiday parties and 2) I really LOVE these Gourmet Garden products and am so thrilled to introduce them to you!

Let’s talk about holiday entertaining. You guys already know I’m not good at it. I’m fantastically good at pinning party ideas. But I’m nooooot so great at actually making them happen.

And let’s face it, the holidays may be the absolute worst time to plan a party. Not only are you competing with 20 bajillion other parties, but you’re also worried about wrapping gifts, troubleshooting the one darn strand of Christmas lights that won’t stay lit, learning how to cook holiday dinner for your family (psst, here’s a recipe for easy Oven Roasted Turkey), and attending who knows how many elementary band performances. God love the parents of the 5th grade trumpet player. AmIright??

Who has time for extravagant party plans in the midst of all that chaos? Ain’t nobody. That’s who.

Which is why today #SundaySupper is partnering with Gourmet Garden to offer you 20 fresh, easy, flavorful recipes for holiday entertaining.

If you haven’t tried Gourmet Garden’s collection of fresh herbs yet, they’re an incredibly convenient addition to your fridge. The folks at Gourmet Garden have literally found a way to bottle freshness, so you can get that fragrant, green, bold basil goodness in a convenient squeeze tube. A 2 Tablespoon squeeze from the bottle is the same as 1 Tablespoon of fresh herbs. It’s like herbs for astronauts. Awesome.

I keep the garlic and ginger on hand always (because I’m lazy and peeling and chopping garlic is a PAIN!), but I just recently discovered their Red Chili Pepper Paste and it has become a new favorite. It’s so easy to add spice to pastas, soups, and casseroles. Just a squeeze and your done. I l-o-v-e it!

Recently I found a new way to use the chili pepper paste and it just so happens to involve one of my favorite easy holiday appetizers: Raspberry + Brie.

Something happens when you bake savory brie with a fruity topping and it’s nothing short of magical. Baked Brie always seems to be the first dish to disappear at parties. It has a way of calling you back for seconds…and sevenths.

It turns out, chili pepper paste really takes this classic holiday appetizer to the next level. It tempers the sweetness of the raspberry jam and adds just the right amount of subtle heat. I’ve been saving the leftover spiced up jam to spread on rolls–it’s just that good.

I decided to serve these baked bries in phyllo cups so they’d be super convenient for parties and also because I’m obsessed with flakiness. (Of the pastry kind, not the dry scalp kind…ew).  But you could also do these up the old fashioned way and just bake the whole wheel of brie using this method. Or wrap it in puff pastry for Brie en Croute. Or use wontons or puff pastry cups instead. Heck, wrap it in bacon if you want. It’s hard to go wrong with brie and jam.

Whichever way you choose to party this year, keep it simple. Say no to Stressmas, and say yes to Spicy Raspberry Brie Bites. You won’t regret it.

Spicy Raspberry Brie Wonton Bites

Spicy Raspberry Brie Wonton Bites

Yield: 15
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients

  • 1/2 cup raspberry jam (seedless if you can find it)
  • 1 heaping Tablespoon Gourmet Garden red chili pepper paste
  • 8 ounces brie cheese
  • 30 phyllo cups (you can purchase the cups in packages of 15 or easily make them yourself using this method)

Instructions

  • Preheat the oven to 375 degrees.
  • Scrape off most of the brie's "skin" and cut into 30 small pieces.
  • Whisk together the raspberry jam and chili pepper paste and set aside.
  • If using store bought phyllo cups, place them on a baking sheet then drop a square of brie in each one. Bake for 5-6 minutes of until phyllo is crisped and cheese is melty.
  • If using your own pre-cut phyllo, spray a mini muffin tin with cooking spray then press the phyllo squares into each hole, dropping a piece of cheese in each one. Bake for 5-6 minutes or until phyllo is crisp and cheese is melty.
  • Remove the cups from the oven and place a dollop of the jam in each one.
  • Serve warm. If you need to reheat, you can pop these back in the oven at about 250 degrees for a few minutes.
