Pork and Apricot Kebobs

I’m taking a few weeks off from the blog to spend some time with our little man and learn how to survive on 3 hours of sleep and baby giggles. While I’m away, some generous friends have offered to share their mad blogging skills here on NeighborFood. Today, Susan of The Girl in the Little Red Kitchen is here with a perfect weeknight meal- Pork and Apricot Kebobs. I had the pleasure of meeting Susan last year, where we bonded over the state of our unruly curly hair in the ridiculous Florida humidity. I also got a chance to try her baked goods in person, and let me tell you, this lady knows her way around a kitchen. I’m going to let her take it away!

Pork and Apricot Kebabs

Hello Neighborfoodies! Iโ€™m Susan from The Girl In The Little Red Kitchen and Iโ€™m thrilled to be here while Courtney is on maternity leave taking care of her little man! Iโ€™m sharing an easy and healthy-ish recipe today thatโ€™s perfect for after work or in Courtneyโ€™s case for a new mom {or dad} to grill up at the end of a busy day.

These Pork and Apricot Kebobs come together quickly and are packed full of flavor. Iโ€™ve used pork tenderloin that I marinated overnight in balsamic vinegar for a nice tang to go along with the sweetness of the apricots and Vidalia onions skewered together.   They cook up quickly once tossed on the grill or on your stovetop grill pan. Pair it with some corn or potato salad and you are good to go!
