I know you all are busy. You’ve got presents to wrap, cookies to bake, stockings to stuff, and parties to look fabulous at. I’m not here to make your life more complicated. In fact, quite the opposite. Remember last week when we talked about making space, leaving room for rest, and enjoying the moment? That’s what I’m all about. And these Spicy Tex Mex Mini CheeseBalls are going to help us both get there.

The cheese ball might be my favorite holiday party treat. It’s universally loved, ridiculously simple to throw together, and has that bit ofย retro flair I can’t resist. But you know what’s even better than a cheese ball? A MINI CHEESE BALL. That’s right, friends. Personal sized cheese balls. It’s a dream come true.

The mini cheese ball solves several perplexing party appetizer problems. First, portion control. I don’t know about you, but I have a hard time resisting a cheese ball, and when there’s a giant sphere sitting in the center of the table, I’ll keep going back until the crackers run out. This gives me my cheese ball fix AND keeps me from having to spend the rest of the party withย the top button of my jeans undone.

Second, the retrieval. No more awkwardlyย balancingย your plate of meatballs and baby carrots in one hand while also attempting to knifeย off a portion of cheese ball. Instead, you’ll look graceful and totally put together as you swipe your very own mini cheese ball off the table like a boss.

But these mini cheese balls are more than just a cute face. They’reย also crazy delicious. Spicy Tex Mex Mini Cheese Balls

Ingredients

  • 1 container Fiesta La Terra Fina dip
  • 8 ounces cream cheese, at room temperature
  • 1/2 cup shredded pepper jack or chipotle jack cheese
  • Paprika and chopped cilantro, for topping
  • 20 scoop tortilla chips

Instructions

  • In a bowl, beat together the dip, cream cheese, and shredded cheese until smooth. Use a cookie scoop to make small, bite sized balls. Place the balls on a parchment lined tray and refrigerate for at least 30 minutes.
  • Roll the balls in paprika, cilantro, or both. Place each one in a tortilla scoop. Serve immediately or refrigerate until ready to serve.
