I don’t know how or when Easter brunch became a thing, but it seems appropriate that a holiday which celebrates resurrection and new life would begin with a morning feast.
Brunch is the meal where anything goes. You can eat pancakes or a burger, eggs or salad. One of my local restaurant favorites even serves a french toast platter with scoops of cinnamon ice cream on top. So yes, you can even eat ice cream for brunch. Enjoy!
