Tater tot casserole is a classic baked comfort food made with seasoned ground beef, tender green beans, and a creamy, cheesy sauce, all topped with crispy golden tater tots. Everything is layered in a casserole dish and baked in the oven until hot and bubbly, with the tots turning perfectly crisp on top!

Why You’ll Love Tater Tot Casserole

When I was 12, this classic tater tot casserole was my favorite meal on the planet! No hesitation. No close second. Nothing says high class quite like a casserole topped with tater tots, am I right? It’s basically a cheeseburger, only instead of a bun, you get crispy potatoes (and if you’re not currently imagining a cheeseburger on a tater tot bun, I don’t know what to tell you).

If you’ve ever made our cheesy ground beef pasta casserole, you already know we believe in hearty, family-style dinners that actually fill people up. This hamburger tater tot casserole brings that same cozy comfort, but with a crispy potato crown that really steals the show. Like our runza casserole, it feeds a crowd, kids love it, it reheats beautifully, and somehow tastes even better the next day when the flavors have had time to settle in together.

Ingredients You’ll Need

  • Olive oil: Helps brown the beef and onions evenly.
  • Ground beef: The hearty base. An 80/20 blend works well, just drain it very well.
  • Yellow onion: Adds sweetness and savory depth.
  • Kosher salt, black pepper, garlic powder: Critical for flavor. Season generously so the filling never tastes bland.
  • Cream of mushroom soup: The creamy backbone of the casserole.
  • Sour cream: Adds tang and richness.
  • Milk: Loosens the sauce so it spreads evenly.
  • Low sodium canned green beans: The traditional veggie layer in this casserole.
  • Shredded cheddar cheese: Melts into a gooey, slightly sharp layer that bubbles up around the edges.
  • Frozen tater tots: The crispy, golden topping that makes this dish what it is.

Simple Substitutions

  • Corn instead of green beans: Some families swear by corn. If that’s your tradition, go for it! Just drain it well.
  • Ground turkey: You can swap ground turkey for beef if you prefer. Just season really well since turkey is leaner and milder in flavor.
  • Cream of chicken soup: If you’re not a mushroom fan, cream of chicken works just as well in the sauce.
  • Frozen green beans: Use thawed or lightly steamed green beans instead of the canned beans.

How to Make Tater Tot Casserole with Green Beans

I briefly went down an internet rabbit hole researching other versions of this casserole – corn versus green beans, cheese versus French fried onions, tots on top versus mixed in. Let’s just say people have strong feelings. In the end, I stuck with my mom’s version. This green bean tater tot casserole comes together in about 20 minutes and is made with freezer and pantry staples, which is why it was a go-to for my parents and remains a go-to for me today.

Step 1: Brown the beef and onions. Preheat the oven to 400 degrees. Heat olive oil in a large skillet over medium-high heat. Add ground beef and onions, spreading them out. Brown for 3 minutes, flip, then continue cooking 7-8 minutes, stirring occasionally, until fully browned and onions are softened. Drain the fat. Excess grease is one of the main causes of a watery casserole. Season with salt, pepper, and garlic powder. Spread the meat mixture in a 9 x 13 inch pan.

Step 2: Whisk together cream soup, sour cream, and milk. Pour evenly over the beef layer. Scatter green beans over the sauce, then sprinkle evenly with shredded cheese.

Step 3: Arrange frozen tater tots in tight rows over the cheese. Don’t thaw them! Frozen tots crisp better because the exterior stays firm while the oven heat evaporates surface moisture. Lightly spray the tops with oil if you want them to be extra golden.

Step 4: Bake uncovered for 30-35 minutes, until bubbling around the edges and the tops are deeply golden. For extra crispiness, broil 2-3 minutes at the end.

Tips for Crispy Tater Tots

  • Bake at 400°F. This is the sweet spot for golden, crunchy tots without drying out the creamy filling underneath!
  • Bake uncovered. Covering the casserole traps steam, which softens the tots from underneath. Letting it bake uncovered allows moisture to evaporate so the tops stay nice and crisp.
  • Drain excess grease. Too much fat in the filling creates extra steam and leads to soggy potatoes, and nobody wants that.
  • Keep tots on top. Don’t mix them into the filling. Layering them on top protects their delicious texture.
  • Broil at the end. I like to switch to broiler mode for a few minutes at the end of the bake to give the tots some extra crunch.

Make Ahead + Freezer Instructions

  • To make ahead, assemble everything except the tater tots. Keep in the fridge for up to 2 days or freeze for up to 3 months. When ready to bake, thaw overnight if needed, then add the tots and bake as directed.
  • This recipe feeds about 10-12 people. You can divide it between two smaller pans and freeze one for later, just like we do with this make-ahead roasted broccoli cheese casserole or this ritz cracker chicken casserole. Same effort. Two dinners!

Ingredients
 

  • Olive oil (to coat)
  • 2 lbs. ground beef
  • 1 small yellow onion (chopped)
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon garlic powder
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup milk
  • 2 cans low sodium green beans
  • 2 cups shredded cheddar cheese
  • 1 32 oz. bag frozen tater tots
  • Additional Kosher salt (for serving)

Instructions

  • Preheat oven to 400 degrees.
  • In a large skillet, heat the Olive oil over medium high heat. Add 2 lbs. ground beef and 1 small yellow onion and spread out over the pan. Brown for 3 minutes, flip, then continue to cook another 7-8 minutes, stirring occasionally, until beef is browned and onions are softened. Drain the fat. Season with 1 teaspoon Kosher salt, 1/2 teaspoon black pepper, and 3/4 teaspoon garlic powder. Place meat mixture in the bottom of a 9 x 13 inch pan or 2 9 inch pie pans or baking dishes.
  • In a mixing bowl, whisk together cream 1 can cream of mushroom soup, 1 cup sour cream, and 1 cup milk. Pour over the hamburger mixture.
  • Scatter 2 cans low sodium green beans over top of the soup mixture. Scatter 2 cups shredded cheddar cheese over green beans.
  • Arrange the 1 32 oz. bag frozen tater tots on top of the cheese in tight rows. You might have 2-3 leftover, but you'll use most of the bag. Spray with a vegetable oil or coconut oil spray for extra crispiness, if desired. Bake for 30-35 minutes, or until the casserole is bubbly and tater tots are browned. If you like your tots to be extra crispy, turn on the broiler and broil for a final 2-3 minutes.

Notes

  • To make ahead of time, assemble the casserole, leaving the tater tots off the top. Refrigerate for up to 2 days or freeze for up to 3 months. When ready to bake, thaw the casserole overnight in the fridge if needed, then add the tater tots on top and bake as usual. 
  • For a vegetarian version replace meat with 2 pounds of fresh sliced mushrooms sauteed in 1 Tablespoon butter and 1 Tablespoon olive oil.
