Baked Italian Sausage and Potatoes

Baked Italian Sausage and Potatoes with Green Beans is an easy one pan dinner. Serve it with a tangy sweet dijon mustard sauce for a hearty, flavorful meal.

Ingredients
 

For the sausage and potatoes:

  • 3 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary (or 2 teaspoons fresh)
  • 1 heaping teaspoon Kosher salt
  • 1 1/2 lbs. mixed baby potatoes (quartered)
  • 12 ounces green beans (trimmed and halved)
  • 5 mild Italian sausage links
  • Fresh cracked pepper (to taste)

For the dipping sauce:

  • 2 Tablespoons dijon mustard
  • 2 teaspoons whole grain mustard
  • 2 teaspoons honey
  • 1 teaspoon white wine vinegar

Instructions

  • Preheat the oven to 400 degrees. Line a baking sheet with foil and spray with baking spray.
  • In a small bowl, whisk together olive oil, rosemary, garlic powder, and salt. Add the potatoes to the pan and toss with half the oil mixture. Toss the remaining oil mixture with the green beans, and set aside.
  • Spread the potatoes over the baking sheet and bake for 10 minutes. Stir the potatoes, then nestle the green beans and Italian sausage on the pan. Sprinkle with black pepper to taste.
  • Bake for 15 minutes then stir the vegetables and turn the Italian sausages. Bake another 10-15 minutes or until potatoes are tender and sausages are cooked through.
  • Meanwhile, to make the sauce, whisk together all ingredients. Serve with the sausages. Refrigerate any leftovers.

Notes

  • The green beans can be swapped out for a bell pepper and red onion and made into a delicious Italian sausage sandwich.
  • Feel free to use any kind of uncooked sausage you like. If you'd prefer to use cooked sausage, add it to the pan for the last 15 minutes.
  • The potatoes can be swapped out for other hearty root vegetables like sweet potatoes or carrots. Just be sure to chop them into small 1 1/2 inch chunks.
