Doritos Taco Salad

Ingredients
 

  • Olive oil (to coat)
  • 1 lb. ground beef
  • 1/2 yellow onion (chopped)
  • 1 1/2 Tablespoons homemade taco seasoning
  • 1 head iceberg lettuce (or about 6 cups chopped mixed lettuces)
  • 4 tomatoes (chopped)
  • 2 avocados (chopped)
  • 15 oz. kidney beans (rinsed and drained)
  • 2 cups shredded Cheddar cheese
  • 1 large bag Doritos or Fritos

For the dressing:

  • 3/4 cup Miracle Whip
  • 1/4 cup sour cream
  • 1 Tablespoon sugar
  • Juice of 1 lime
  • 1 Tablespoon taco seasoning
  • 1 - 2 teaspoons Tabasco sauce (to taste)

Instructions

  • Add the oil to a skillet set over medium heat. Add the ground beef and onions, breaking up the ground beef until it's spread evenly over the pan. Saute until beef is browned and onions are softened, stirring occasionally.
  • Stir in kidney beans and taco seasoning to coat. Taste and add additional salt, if necessary. If there's a lot of extra fat left in the pan, drain it off.
  • Meanwhile, prepare the dressing. Whisk together Miracle Whip, sour cream, taco seasoning, sugar, and hot sauce, to taste.
  • In a bowl, combine the lettuce, avocado, tomato, beans, cheese, beef mixture, and chips.
  • Add the dressing and stir together until combined. Serve immediately.

Notes

  • To make taco salad ahead of time, prepare all ingredients except the avocado and chips and refrigerate (with dressing in its own container) for up to 24 hours. Right before serving, add the avocado, chips and dressing, and serve.
  • To make a layered Doritos taco salad, pick a large bowl and layer the lettuce, beef and bean mixture, tomatoes, then cheese. Spread the dressing on the top. I recommend omitting the avocado for the layered salad. Right before serving, crumble the chips on top.
