Fragrant and satisfying, this Italian Sausage Tortellini Soup is full of rich and hearty flavors thanks to spicy Italian sausage, tortellini, and vegetables.
1lb.ground mild Italian sausage(or use hot if you prefer)
1sweet yellow onion(chopped)
3clovesgarlic(minced)
4cupslow sodium beef broth
1/2cupwater
1cupred wine(or you can substitute additional broth)
14ouncediced tomatoes(undrained)
14ouncetomato sauce
4carrots(peeled and thinly sliced)
1Tablespoonchopped fresh basil leaves
1/2teaspoondried oregano
2small zucchini(sliced)
3Tablespoonschopped fresh parsley
8ouncesfrozen cheese tortellini
Parmesan cheese(for serving)
Instructions
In a large heavy bottomed pot, cook sausage over medium heat until no pink remains. Drain all but 1 Tablespoon of fat. Add onion and garlic to the pan and saute 2 minutes, or until fragrant.
Add broth, water, wine, chopped tomatoes, tomato sauce, carrots, basil, and oregano to pot. Bring to a boil over medium high heat then reduce heat and simmer uncovered 30 minutes.
Stir in zucchini and parsley and simmer for 10 minutes. Add tortellini and simmer an additional 5-8 minutes, or until tortellini is cooked through. Serve hot with Parmesan cheese and a sprinkle of parsley.
Notes
Tortellini Soup with Sausage can also be frozen. Simply prepare the broth and veggies, allow the soup to cool, then freeze for up to 3 months. The soup can be defrosted overnight in the fridge or placed in a bowl of cold water for 30 minutes.
I always recommend refrigerating or freezing this soup without the tortellini. Before serving, return the soup to a boil and add the tortellini. This keeps the tortellini from getting soggy!
