What could be better than a peanut butter and marshmallow fluff sandwich? How about a golden Grilled Fluffernutter with melty peanut butter and banana slices? Yeah, that’s better.
It officially turned fall this week, and I’m welcoming the new season with apple pie scented candles, camping trips, and elastic waisted pants.
Let’s be honest. Fall isn’t exactly known for being the healthy season. That’s January’s territory. Autumn is meant for the melty, the gooey, the cozy, and the comforting. Autumn is pie land, donut land, pumpkin spice EVERYTHING land. It’s a land of candy corn mountains, caramel lakes, and apple cider rivers. What I’m trying to say is, Autumn is my kind of place.
These Grilled Banana Fluffernutter Sandwiches fit right into Autumn-land. This sandwich could be your bed, where you spend your evenings slumbering between layers of warm peanut butter and fluffy marshmallow creme. Plus, I hear marshmallow creme provides excellent back support.
Apparently I lived a deprived childhood, because I had never heard of the fluffernutter sandwich until I met the Mr. One of his favorite snacks/breakfasts/lunches/dinners was a simple sandwich made with marshmallow creme and peanut butter. Truth be told, I thought it was weird, and never really accepted it into my normal eating routine.
That is, until I grilled it. Grilling changes everything. We’ve already talked about the wonders of the Grilled PB&J, but this Grilled Fluffernutter is like the PB&Js crazy awesome, eccentric aunt. The bread is golden and crisp, the insides are a molten stream of peanut butter and marshmallow. It’s absolutely a hot mess of goodness.
I added bananas, because peanut butter and bananas are my favorite celebrity couple, and it turned out to be a good decision. This sandwich was completely irresistible. I planned to make it, photograph it, then clean up the mess, and enjoy a leisurely lunch, but instead I ended up taking one bite and then scarfing down the rest of it while standing over the kitchen sink. What can I say? I’m just classy like that.
- 2 slices of wheat bread
- 2 Tablespoons butter, at room temperature
- 2 Tablespoons peanut butter
- 2 Tablespoons marshmallow creme or fluff
- ½ banana, sliced
- Spread one side of each piece of bread with the butter. Spread the peanut butter onto the non-buttered sides of the bread, followed by the marshmallow fluff. Layer with sliced banana then close the sandwich.
- Heat a grill pan over medium heat. Place the sandwiches in the pan and grill until both sides are golden brown, about 3-4 minutes per sides. Serve immediately with plenty of napkins (and maybe a fork!)
