To freeze leftover soup: Allow it to cool completely, then place in a freezer-safe bag or container. Freeze for up to 4 months. Thaw overnight in the fridge then reheat on the stove top or in the microwave. Note that non-cream based soups that don’t include pasta are best for freezing. I sometimes freeze and enjoy pasta-based soups, but the pasta can be a bit mushy after thawing.

Helpful Tips for Soup Making
Choose a large, heavy bottomed pot for making soup on the stove. An enameled cast iron pot in the 5-6 quart range is my favorite. I love this Le Creuset Dutch Oven, but this Lodge Dutch Oven is also a great budget friendly option.
Many soup recipes can easily be converted to a slow cooker or instant pot. I really love thiscrock pot.
For pureed soups, an immersion blender is the way to go. If you’re using a regular blender, be sure to place a thin towel underneath the lid, so steam can escape.
Season as you go. Build flavor in your soups by seasoning as you go. If you’re sauteeing veggies, roast or ground beef, season them to taste with salt and pepper before moving on to the next step.
Use a high quality broth. Chicken, veggie, or beef stock is the base of most soup recipes, so choose a good one or make your own. We love to keep Better than Bouillon in the fridge so we always have great broth on hand.
Experiment! Soup is the best “kitchen sink” menu. Add whatever veggies might be wasting away in the produce bin or toss in leftover protein.
