Back in college I had many cooking specialties.
Things like…
Macaroni and Cheese from a box.
Authentic Italian pastas….stored in a frozen bag….with the word Bertolli on the front.
And finally, drum roll please……..charred garlic bread.
I wish this were a joke. That we could all just laugh and toast our mojitos and carry on our merry way.
But it’s not. It’s totally true. Especially that part about the darn charred garlic bread!
Back in college, we often seemed to have low grade, half stale bread lying around. A couple forgotten hot dog buns, the end slices of a loaf of bread, the bagels lodged in the back of the fridge for who knows how long.
At any rate, the bread needed to be used. And when you’re a poor college student, bread slathered in butter and garlic and drizzled with mozzarella feels like pure luxury.
Only problem is, I cannot be trusted around broilers.
Seriously, can NOT be trusted.
At first I would hover around the oven like an overbearing parent, checking it every 10 seconds.
But when it seemed liked nothing was happening, I would get distracted and wonder off to look at Facebook, chat it up with some roomies, or start an impromptu dance party. Life happens.
I’d be having the time of my life until I would smell it…the smell of blackened bread wafting through the apartment.
It doesn’t matter how fast you run. By the time you get there, it’s too late. The bread is only a shadow of what it once was, and it wreaks of smoke and broken dreams.
Every. stinking. time.
This year, I resolved to fix my little “problem,” and finally master the art of homemade garlic bread.
All I have to say is, it’s about time.
There’s nothing fancy or difficult about this.
In fact, right now you’re probably thinking “was this post really necessary? Everyone knows how to make homemade garlic bread!”
Well friends, I have to believe someone else out there has stared at too many a blackened loaf. They’re all too familiar with the smell of charred sourdough. They know exactly how it feels to watch all their hopes and dreams get thrown in the trash.
This post is for that person. You’re so close to garlicky, buttery, cheesy homemade garlic bread. Pair it with Italian Sausage Tortellini Soup and a Creamy Caesar Dressing Salad for a dinner that’ll impress even the pickiest eaters!
Easy Cheesy Homemade Garlic Bread
Ingredients
- 4 Tablespoons unsalted butter
- 2 Tablespoons olive oil
- 4 cloves garlic, minced
- 1/2-1 teaspoon garlic salt (This is an estimate. I just sprinkle evenly over both sides of the loaf)
- 1 loaf Italian bread, halved lengthwise
- Couple handfuls mozzarella cheese
- Chopped fresh herbs

Instead of using garlic salt, do you have any other substitutes? I’m a 14 year old and I don’t really have many varied ingredients.. Me and few other younger kids are cooking for adults as a change! Any other recipe suggestions? Hilarious, by the way.
You could use garlic powder or a spice blend that includes garlic. You can check out the labels on spice blends to see if they include garlic. A blend of Italian seasoning would also be tasty.
