Week one of the house renovation is in the books, and we are…dusty. Demolition has had it’s challenges, but thankfully we didn’t encounter any huge setbacks (guess we wouldn’t have been a great candidate for our own HGTV show), and it’s helped so much to see the progress made!
Because we’re eating out more than usual, I’ve been craving big bowls of salad and meals that we can make on the grill. Luckily, this week’s meal plan delivers with fresh and simple meals for summer. The Strawberry Icebox Cake is even made without an oven, so whether you’re loathe to heat up the kitchen or you happen to not have a stove currently (ahem), it’s the perfect dessert for hot days!
