Baked Italian Sausage and Potatoes is a complete meal made on a single sheet pan. With just 10 minutes of prep, this easy and hearty dinner is a mainstay on our menu, especially during the winter months.

Sheet Pan Italian Sausage and Potatoes

Sausage is way underrated as a dinner option, in my opinion. It’s quick cooking, super flavorful, and can be used in everything from Italian Sausage Stew with White Beans to One Pot Orecchiette with Sausage and Broccoli.

Today, I’m going to be sharing one of our favorite ways to eat Italian sausage–cozied up next to some tender roasted potatoes and green beans!

This Sheet Pan Sausage and Potatoes is an easy way to get a well-rounded meal on the table. If you’re also a person who never remembers to plan for side dishes, sheet pan meals are the way to go. Your main dish and veggie is all in the same place, with minimal prep and minimal clean up.

  • Versatile– You can swap out the veggies and herbs depending on what you have on hand, and even use a pre-cooked flavored sausage to change things up.

  • Uncooked Italian sausage links– You can use mild, sweet, or spicy Italian sausage for this recipe, or swap turkey or chicken sausage if you prefer.
  • Potatoes– I love petite medley or baby potatoes, but you can use any kind of potato here, including Yukon golds or red potatoes. Just be sure to chop them into smallish 1 1/2 inch chunks.
  • Green beans– I used regular green beans. If you’re using French green beans (haricot verts) that are usually thinner and longer, the roasting time will be slightly less.
  • Seasoning blend– I use a blend of Kosher salt, pepper, garlic powder, and rosemary, which works great for both the potatoes and the green beans. If you can get your hands on fresh rosemary, it will really take the flavors over the top!

How to Make Italian Sausage and Potatoes in the Oven

Step 1: Prep. Preheat the oven to 400 degrees and line a sturdy half sheet pan (<<<these are our favorite) with foil.

Step 2: Prepare the seasonings. Whisk together the olive oil, rosemary, garlic powder, and Kosher salt.

Step 3: Start the potatoes. Spread the potatoes out on a baking sheet and toss with half of the olive oil mixture. Place in the oven and bake for 10 minutes.

Step 4: Add the sausage and green beans. Take the pan out of the oven, stir the potatoes, and nestle the green beans and Italian sausage in with the potatoes. Drizzle the remaining olive oil mixture over the green beans and toss. Sprinkle with fresh cracked pepper.

Step 5: Finish roasting. Bake for another 15 minutes. Remove from the oven and stir, flipping the Italian sausages. Bake for a final 15 minutes or until potatoes and beans are tender.

How do you know when Italian sausage is done?

Uncooked Italian sausage links should be cooked until it reaches an internal temperature of 160-165 degrees. A good meat thermometer is the fastest and easiest way to test for sausage doneness.

Please note that it’s normal for Italian sausage to have a pinkish hue even after it is fully cooked.

Storage and Make Ahead Instructions

Because cut potatoes tend to brown quickly, I recommend roasting this dish soon after slicing he potatoes.

The leftovers keep very well in the fridge in a sealed container for up to 5 days. Reheat leftovers with a little oil on the stove top or in the microwave.

What to Serve with Sausage and Potatoes

My kids like to dip these baked sausages in their favorite 6th food group: ketchup. My husband and I prefer a quick, tangy dijon mustard sauce. It cuts the richness of the Italian sausage perfectly and brings a nice zing to everything!

Sausages with potatoes and green beans is really a meal on its own, but you can also add some crusty bread, crock pot applesauce, or an easy garden salad to round it out!

Tips + Variations on Sausage and Potatoes

  • Do not poke holes in the sausage before baking. Keep all those yummy juices inside!
  • Use any kind of uncooked sausage for this recipe. Sweet, mild, and hot Italian sausage all work well. If you’re using a precooked sausage, it can be added to the pan for just the last 15 minutes.
  • Substitute different vegetables, just keep in mind you’ll want to use vegetables that bake for about the same time or can be baked in phases.
    • Examples: If you’re using zucchini or yellow squash, add it to the pan during the last 15 minutes. Heartier vegetables like carrots, butternut squash, or sweet potato should be cut into smaller (1 inch) chunks and baked the full amount of time.
  • Change up the seasonings to create your own flavor profile. Add thyme to this garlic/rosemary combo or try paprika, dried basil, and oregano.
  • Make an Italian sausage sandwich! Swap the green beans for a bell pepper and red onion, then load the Italian sausage, peppers, and onions in a bun and serve the potatoes on the side.
  • Turn leftover sausage and potatoes into a breakfast hash. Slice the sausage into coins and fry in a pan along with the potatoes and a little oil. Serve with a dippy fried egg.

Ingredients
 

For the sausage and potatoes:

  • 3 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary (or 2 teaspoons fresh)
  • 1 heaping teaspoon Kosher salt
  • 1 1/2 lbs. mixed baby potatoes (quartered)
  • 12 ounces green beans (trimmed and halved)
  • 5 mild Italian sausage links
  • Fresh cracked pepper (to taste)

For the dipping sauce:

  • 2 Tablespoons dijon mustard
  • 2 teaspoons whole grain mustard
  • 2 teaspoons honey
  • 1 teaspoon white wine vinegar

Instructions

  • Preheat the oven to 400 degrees. Line a baking sheet with foil and spray with baking spray.
  • In a small bowl, whisk together olive oil, rosemary, garlic powder, and salt. Add the potatoes to the pan and toss with half the oil mixture. Toss the remaining oil mixture with the green beans, and set aside.
  • Spread the potatoes over the baking sheet and bake for 10 minutes. Stir the potatoes, then nestle the green beans and Italian sausage on the pan. Sprinkle with black pepper to taste.
  • Bake for 15 minutes then stir the vegetables and turn the Italian sausages. Bake another 10-15 minutes or until potatoes are tender and sausages are cooked through.
  • Meanwhile, to make the sauce, whisk together all ingredients. Serve with the sausages. Refrigerate any leftovers.

Notes

  • The green beans can be swapped out for a bell pepper and red onion and made into a delicious Italian sausage sandwich.
  • Feel free to use any kind of uncooked sausage you like. If you’d prefer to use cooked sausage, add it to the pan for the last 15 minutes.
  • The potatoes can be swapped out for other hearty root vegetables like sweet potatoes or carrots. Just be sure to chop them into small 1 1/2 inch chunks.
